This dish is creamy Chicken with Artichokes is rich and full of flavor. And utilizes a small can of artichokes and fresh spinach. My family requests this dish often and really loves it, I hope your family does too!
When making any type of Chicken Breast recipe these days, I like to prepare them in a cast iron skillet. I
As it cooks them quickly and evenly. Plus browns them better than any skillet I have ever found~ So if you can get your hands on one, then trust me it is well worth it.
The artichokes and spinach really make this dish extra special. Just make sure using whole canned artichokes that are packed in water and nothing else. Otherwise the flavor may be really thrown off.
And allows you to skip any starches if desired.
As it is filling all on it’s own. You can always serve this though, over a bed of your favorite pasta or alongside some rice.
HOW TO MAKE Chicken with Artichokes
- Start with 2 fresh chicken breasts and slice them in half to create four thinner pieces.
- Do the same with 2 pieces of garlic.
- Then sauté butter in your skillet of choice, adding in the chicken once melted and season with salt and pepper.
- Sauté the chicken on both sides till browned.
- Then remove the chicken and set aside.
- Meanwhile, saute the garlic till fragrant in the same pan.
- Add in the dijon mustard, parmesan cheese and cream cheese.
- Allow the cream cheese to melt till creamy then add in the can of artichoke hearts (that have been marinated in water).
- Along with the fresh spinach.
- Lastly, add back in the cooked chicken breasts and simmer all together on low/medium heat for 5 minutes.
- Enjoy as is or alongside rice or potatoes!
