- 2 tbsp Red Thai Curry Paste
- 2 Boneless chicken breasts
- 5 cups Chicken Stock (low sodium)
- 1 cup Cold water
- 2 1/2 cups Egg noodles
- 2 tbsp Olive oil
- 1 large Orange Pepper
- 1 large Red Pepper
- 1/2 cup Cilantro*Optional
- 4 cloves Garlic
- 1 large Onion
- 1 Lime
- 1 tsp Salt
I made this Thai Chicken Noodle Soup in my crock pot, because I was too lazy to do the dishes. True Story! I set it to brown and cooked the whole thing like that, however this can be done on the stovetop the same way.
The Christmas rush is over, and it seems like everyone around me is getting sick. So I knew it was time to whip up a hearty soup that make anyone who eats it including myself feel amazing!
So here it is, my favorite recipe for Thai Chicken Noodle soup. It is a combination of the good old hearty chicken noodle soup that most people love and crave when there needing a pick me up. With an addition of some amazing thai flavors, such as Red Thai Curry Paste, lemongrass and Kaffir lime leaves.
Typically, I used to just make the good old basic chicken noodle soup or my awesome flu fighter soup around this time of year. However, I was craving Thai like usual and starting dreaming of this very recipe.
And the flavors come together wonderfully to create the “Ultimate Thai Chicken Noodle soup”. If you like thai food like me then you are going to love, I mean love this soup.
The Ultimate Chicken Noodle soup, is ready in under 30 minutes.
This soup will leave you feeling so good, that you will be going back for more. So if there is more than 4 of you, be prepared to be making another batch.
Packed with immune boosting ingredients and nutrients, this soup is something you will definitely enjoy even when you’re not under the weather.

To make the Thai Chicken Noodle Soup:
Start by chopping your Chicken breasts into bite sized pieces and set aside.
Place a little olive oil into the pot and saute the chopped onion for a few minutes then add in the Red Thai Curry Paste for a couple minutes.
Then with a garlic press, press 4 cloves of garlic and 1 tbsp of fresh ginger into the pot and saute all together for 2 minutes.
Next add in a can of coconut milk, chicken stock, diced tomatoes, pepper, and chicken breasts. Simmer all together on medium – low for 10 minutes.
Squeeze in the juice of one lime.
