This Italian Ham Salad is super easy to make and is packed full on protein from the ham and chickpeas and contains an array of garden vegetables. It is then seasoned with Italian dressing and chilled in the fridge prior to serving.

You want to make sure you are not using canned ham for this recipe, it just is not as nice. You want to go to your local deli and ask for a thick cut of ham as seen below to cube.

Be sure you also, cut all your ingredients the same size makes for a nice SALAD.

You want to use some good quality ham such as the piece I have purchased below! Deli quality is recommend!

Also, if you are adding tomatoes as I do be sure to eat it the day of. Otherwise the tomatoes tend to make it mushy the next day.

If you want to omit them and have the salad the next day go ahead too!

  1. Start by cutting your ham into bite size pieces 
  2. Then all the vegetables
  3. Then add the cubed cheese
  4. And a can of strained chickpeas
  5. Toss all together in a large bowl with Italian seasoning dressing 
  6. Chill at least 1 hour prior to serving and enjoy!

Summer salad

Ingredients

  • 1 thick piece of deli ham
  • 1 can of chickpeas
  • 1 cup chopped broccoli
  • 1 large tomato, chopped
  • 1 cup chopped cauliflower
  • 1/2 cucumber cubed
  • 1 cup cheese, cubed
  • 1/2 cup of Italian dressing

Instructions

  1. Start by cutting your ham
  2. Then all the vegetables
  3. Then add the cubed cheese
  4. And a can of strained chickpeas
  5. Toss all together in a large bowl with Italian seasoning dressing
