This Green Lentil Dahl with Coconut Milk is creamy as it contains vegetable stock and a bit of cream to serve.
You can skip the takeout with Green Lentil Dahl without Coconut Milk.
Prefer to use red lentils go ahead use whatever you have on hand.
Want it more creamy, add in some heavy cream or coconut milk instead of the vegetable stock.
DRY GREEN LENTILS TO COOKED
Start by soaking them prior for 5 minutes then cover them with water and boil then for 5 minutes before covering them on medium heat for another 30 minutes till soft.
Serve this Vegetarian Lentil Dahl with some basmati rice or naan bread if you prefer.

HOW TO MAKE GREEN LENTIL DAHL
- Start by rinsing and draining your green lentils
- Then in a large pot add 1 tbsp of cooking oil and a diced onion, cooked the onion till browned.
- Add in the minced garlic, ginger and curry powder along with the butter and sauté till fragrant.
- Add in the lentils and stock
- Simmer covered for 30 minutes, stir half way through
- Serve with fresh cream if desired and basmati rice.
GREEN LENTIL DAHL WITH COCONUT MILK
This has no coconut milk in it however, if you want it more creamy you can half the vegetarian stock with half coconut milk.

Ingredients
- 2 cups of Green Lentils
- 3 cups of vegetable stock
- 1 tbsp cooking oil
- 2 tbsp butter
- 1 large onion
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1 tsp salt
- 1 tsp fenugreek leaves to serve
- Cream to serve
- pinch cayenne pepper
