Adjust Servings:
1 large English Cucumber you can use any kind
1 cup Greek Yogurt
5 leaves Fresh Mint
2 tbsp Fresh Lemon Juice
to taste Kosher Salt

    Can't take the heat? Then eat some raita. In India, the condiment is used to cool the palate.

    This Raita goes great alongside many spicy dishes, and is often served fresh with many Indian, Pakistani and Bangladeshi recipes. It takes less than 5 minutes to make, and is delicious! You can use this raita recipe as a dip for your favorite Indian breads as well. Basically i’d say it’s similar to what Tzatziki is to the”Greeks” but Raita is enjoyed mostly by the Indian cultures, and now lucky for us all. Feel free to spice it up with cumin, coriander or some cayenne pepper, personally I like just salt for seasoning, keeps it cool. Enjoy!

    What you will need:

    To make the Raita:

    1. Peel your cucumber and then grate half of it into a bowl.
    2. Whisk your yogurt to make it smooth and then add in your grated cucumber.
    3. Mix all together, and top with a bit of cumin powder.
    4. Chill in the refrigerator for at least one hour before serving cold.
    5. Enjoy!
