This Cajun Sausage Pasta is made with Cajun andouille  sausage, eggplant and gemelli pasta which helps to soak up all those delicious flavors.

Cajun Sausage Pasta

This Cajun Sausage Pasta serves as a one pot dinner and can feed a family of four. Want another tasty sausage recipe? Try my one pot Sausage and potatoes with green beans.

Note you can use any type of sausage for this recipe, however the andouille has Cajun spices to it and make it extra special if you ask me. Don’t like spice, use Italian sausage instead.

Cook the sausage first then simply add everything to 1 baking dish and bake at 375f for 40 mins.

THE BEST CHEESE FOR CAJUN FOOD

You want to use a sharp cheddar or a Parmesan cheese for a bolder taste. And if you want a more mild flavor, you could try a Gruyere or a Swiss.

Cajun Sausage Pasta

Cajun Sausage Pasta

Want more spice simply add red chili pepper flakes!

Ingredients

  • 4 Andouille sausage
  • 2 cups of gemelli pasta
  • 2 cups of sharp cheddar cheese
  • 2 cups tomato sauce
  • 1 cup beef stock
  • 1 small eggplant, diced
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp fresh parsley

Instructions

  1. Start by frying the sausage in a large pan till browned, then set aside.
  2. In a large baking dish add the pasta and all seasonings toss to coat.
  3. Dice the cooled sausage and toss in and cover with beef broth and tomato sauce.
  4. Stir to mix everything together nd top with cheese
  5. Bake at 375f for 40 minutes till cooked
  6. Top with fresh parsley to serve
