Scrub the mussels, removing any dirt and hairy bit, clean and discard any that are broken.

Put the mussels in a pot with the water, cover and put on a medium-high heat for a couple minutes until they open up.
- Discard any mussels that have not opened.

Meanwhile, in a small bowl mix together the passata tomato sauce, parsley, garlic powder, oregano powder and olive oil.

Place the mussels into a baking dish and top with the sauce, stirring to coat the mussels.
- Top with fresh parmesan cheese.

Bake the mussels for approx 10 minutes till the cheese melts.
